MEESUA SOUP 🍜 I grew up eating my Ah Mm (aunt) punya Meesua Soup on the first day of Chinese New Year every year for breakfast/brunch and only recently I wonder… what makes her soup clear looking, yet so flavorful that bring us so much joy during CNY? It’s an umami-packed and hearty soup that we usually just eat plain with meesua, accompanied by red eggs and cili padi kicap (soy sauce +Thai chillies). Turned out, indeed there was a 🌟secret ingredient🌟 that my Ah Mm revealed to me when I interviewed her for her CNY #RecipeForJoy haha!

Ingredient list:
[Yield: 2.5L soup, serves 5-6 pax]
-Chicken carcass (1x is for about 3 pax, you need more if you are cooking for more people. I mix it with store-bought chicken stock, so I don’t have to squeeze in too many chicken carcasses in my pressure cooker)
-Chicken stock (refer to the above for the explanation)
-Dried squid
-Ginger (just a few slices)
-Rock sugar (2 tbsp for about 2.5L soup)
-Cooking wine, about 4 tbsp (our Muslim friends can skip this)
-White pepper powder
-Salt to taste
-Meesua
-Canned straw mushrooms
-Greens (I prefer Roman lettuce or iceberg lettuce)
