Recipe:
Chakalaka Ingredients:
• 1 onion, diced
• 1 tbspn rice bran oil (or any flavourless oil)
• 4 cloves of garlic, crushed
• 2 capsicums, diced (2 different colours)
• 2 carrots, grated
• 250g tin of baked beans
• 2tsp curry powder
• 1 tsp paprika
• 3 tbspn peri-peri sauce
• 1 tbspn tomato paste
• 1 400g tin of crushed tomatoes
• ¼ cup of water
• 1 tsp dried thyme
• 2 bay leaves
• Salt
• Pepper
Directions:
• Add the oil and onion to a camp oven and fry on medium heat until the onion becomes fragrant, then add the garlic and fry for another 3 minutes, stirring regularly.
• Add all the other ingredients (except the baked beans) and cook with the lid off for around 15 minutes on medium heat, stirring regularly. When the liquid has reduced to about half, add in the baked beans and stir through for around 2 minutes.
• This can be served hot or cold.
