"Zlatiborski pršut" isn't a pork meat prosciutto like in Italy or Montenegro or Dalmatia. "Zlatiborski pršut" is smoked and wind dried BEEF tenderloin. So it's totaly diferent.

Prsuta is pork meat, which is in America cooked like steak, but in Serbia it is raw meat that we cover with salt until all water comes out and so that bacteria can't spoil the meat.After that we hang it in room used for smoking food- (pusnica in Serbian) and we light fire under it and put saw dust over fire to create smoke.After smoking it is usually hang at attic- (tavan in Serbian) or basement (podrum i Serbian).We eat it with beer or rakija when our friends come over and that type of meal is called meze

Nenad Tepavac my father built a pušnica in the USA and everyone thought he was nuts until they tasted his meats. I miss it so much. I can still see my Dad, brothers, and friends sitting around a table with scallions, salt, meats, and peppers while downing some clear substance in a Fanta bottle. 😌 homesick now

That is beef prsuta, the color betrays it. Pork prsuta is much lighter in colour, almost pink. You need to get big sharp knife. Prsuta is cut in tin slices, like 1-2 millimetres tin. Serbian prsuta is chunk of meat that is salted and left in cold place for at least 5-6 days, than it is smoked for at least two days, and than it is left in cold, windy place (draft, promaja) for at least two weeks to dry... So you can say it is salted, smoked and dried meat... And pie- it is a pita bundevara, or tikvara... Enjoy 😃

You can buy prosciutto in any grocery store throughout the US, especially Sam's club, Publix and sometimes Walmart. It's not near as good as what you get there in Serbia and it's usually $12.00 lbs!

Pumpkin pie = pita od bundeve (pumpkin = bundeva). You may also like this Balkans recipe for Scrambled Eggs with Prosciutto (it is very easy and fast for preparing and you could be even more surprised with the taste of that prosciutto): cut one slice of prosciutto (of the size like you did in this video) into stripes and warm them up in a pan with one or two tablespoons of oil until they release the grease and change their colour (not for long). Then simply in the same pan on top of that lightly fried prosciutto add 2 or more eggs and stir with a spoon - making the scrambled eggs with prosciutto (fry until the eggs are done). It may be served on a plate with some cheese, sour cream (pavlaka), pickled vegetables, lovely ajvar ;) or just with sliced red onion on the side. Prijatno :) Greetings!

Charles, you need a much bigger knife to cut cured meat :D especially if it's properly dried. Anyway, glad you like cured meat. It's a big part of Serbian cuisine :)

Ajmo' Charles, it's dimljena pršuta (smoked seasoned ham), and it's done THE Sebian way man, THE Serbian way and that's it. A tip: a good wood that's used to smoke itis giving to it such a good smoked flavor. I know it, every Serbian knows it and now you got to taste it. Ideally, as others already mentioned, you ought to use a good butcher's knife and slice it really thin, otherwise it's not tasty as should be. It should melt in your mouth, you shouldn't chew it like a steak :) Not to mention ajvar that is our national and traditional delicacy (that;s why so much variations of it all over Srbija) for the winter (which Slovenians took over by patenting the word "ajvar" etc, they suck greatly in doing it btw). And enjoy Pita all the way ;) All the best from one outlander Serbian.

Can't read all comments, but - have you tasted KAJMAK (from Šumadija, Užice...)? That's Holy Trinity - pršuta, kajmak, ajvar ;) (hard to stay on only three stuff: what about lepinja/pogača, šljivovica, slatko od šljiva, dunja, bilo čega..?). Decisions, decisions....

There are two tipes of prsuta in Serbia,the one you are eating is beef meat,dark color one,red one is pork,beef one is more popular in Serbia while the pork one is more used in Montenegro :)

The thinner the slice of prsuta the better ;) My father has a knife used ONLY for cutting prsuta, it is so sharp it shaves w/o an issue! God forbid you use it for anything else, you are in trouble!

zaista je super sto saljete raznu hranu ali iskreno taj ajvar je sranje veliko,pravi ajvar je od crvene paprike i dobro zrele,od neke mesnate,a u ovoj tegli je izgleda ajvar od neke jako vodenaste paprike rekao bih slonovo uvo i to jos nije ni zrela dobro(za javar bih preporucio papriku zvanu dukat,i to kad je dobro zrela pa i kad je uberes ostavis je par dana da se malo susne i smezura,jer onda ostaje samo gusto meso a ne voda u paprici sto se tice prsute isto sranje,najbolja prsuta je crvene boje a ne ova crna koja je od puno puno losijeg kvaliteta mesa,uostalom ova prsuta nije ni suva dovoljno tako debelu prsutu ostavljaju samo mentalci koji nemaju pojma,prsuta ne sme biti previse debela jer ce onda uvek onaj deo u sredini biti ziv,a zivo meso niti je zdravo niti ukusno(osim izgleda pojedinim mentalcima koji tako ostavljaju prsutu) i sto se tice bundevare,jebe kevu,znaci odlicno izgleda a i verujem da je preukusna,tako se pravi,nije previse debela nego taman,a i fino je stavljeno bundeve unutra koja ima pravu boju zrele bundeve(dakle nikako one zute ili polu zrele) i za kraj nisam kurac ili neki sto mnogo kenja ! samo sam lepo rekao istinu a kad bi malo vise svi govorili istinu verovatno bi bilo bolje stanje u zemlji ali umesto toga cutimo kao PICKE pozz sve najbolje Charles install dark hole in your belly so you can eat as much as you want ;)

Thats not the way to cut prsuta. you need big,sharp knife and you have to cut it in thin slices. When you finish eating that you have to drink some sweet youice.Otherwise you will be thirsty all day.
