I think one of the best, simple sawsawn is a little vinegar, crushed garlic, 1 or 2 chopped red or green chilis(depending on how spicy you want it) and fresh crushed black pepper! You can use it just like that or add chopped onions, or even calamansi or lemon juice. It just cuts through the richness of the lumpia!

Time-saving technique: Use grater for the carrots. Sawsawan: As for the dipping sauce, we have 2 versions. 1st, the sweet-chilli sauce. And 2nd, vinegar dip . for the 2nd dipping sauce, I just slice the onions very thinly, add a little bit of garlic, salt, pepper and sugar to the cane vinegar. You can add chillis if you want it spicy. also, when you roll it, make sure it's tight so it won't soak the cooking oil. and it won't get soggy even if you leave it for hours.

Interesting to see you add parsley. Because I used to serve this a lot to friends (foreign or pinoy) who don't eat pork, I've gotten used to using ground beef (I initially thought it was weird but then got used to it). My version includes an egg, carrots, onions, bell pepper (green for colour), and a mountain of garlic (lol, gotta love the garlic overload). And then just season with soy sauce (instead of salt) and lots of black pepper. I see some comments mentioning sugar, but as I'm from a part of the Philippines that doesn't really have a sweet tooth, we don't add it (to be honest, I didn't even realize others did). For wrapping with the square-type lumpia wrappers, I lay it out as a diamond with one pointy bit facing me, place the filling in, fold the sides, and the roll, and just seal with plain water. (Economical tip: Sometimes I cut the square wrappers into two triangles, have the pointy end facing me, and then roll them up the same way). For sawsawan, I go with spicy vinegar (basi-based or coconut water-based is

Normally I would cut the wrapper diagonally. From one corner to the opposite corner making a triangle. This also doubles the wrapper to make more lumpia 😉. Putting the meat on the wide end and the corner away. Roll once, tuck in corners, put the egg wash on the corner then roll the rest of the way. Also for a little sweet kick, some add raisins. Some also add minced water chestnuts. It's really up to you and what you like.
