Shivangi pulusu
Ingredients for Shivangi pulusu masala powder and pulusu:
1.Brinjal- 250grms(mulla vankayalu)
2.Tamarind- 50 grms
3.Ground nuts- 1 tbsp
4.sesame seeds- 1 tbsp
5.Coriander seeds- 1 tbsp
6.Chana dal- 1 tsp
7.Urad dal- 1 tsp
8.Cumin seeds- 1 tsp
9.Dried red chillies- 4 to 5nos
10.Jaggery powder- 1 tsp
11.Salt as per taste
12.Turmeric powder- 1 tsp
Ingredients for onion karam:
1.onions- 2big nos ( roughly chopped)
2.Garlic - 4 to 5 nos
3.Red chilli powder- 1 tbsp
4.Turmeric- 1 tsp
5.Salt as required
6.Cumin seeds- 1 tsp
Ingredients for Tempering/tadka/popu
1.Oil(peanut oil) - 4 tbsp
2.Cumin seeds- 1tsp
3.Mustard seeds- 1tsp
3.Red chillies- 4 nos
4.Asafoetida(inguva) - 1/2tsp
5.Fenugreek seeds- 4 to 5 nos
Instructions:
1.Take a pan dry roast all dry ingredients (chana & uraddal, cumin seeds, sesame seeds, coriander seeds, ground nuts and dried red chillies) as shown in the video
2.Allow it cool and blend them in to a fine powder)
3.Next, take blender add chopped onions, garlic, cumin seeds, chilli powder, turmeric and salt blend in to a fine paste.
4.Take a vessel add water, salt and turmeric and cut the brinjal ( as shown in the video)let it sit the brinjals in that water for 5mints
5 Next, add grinded paste and grinded shivangi pulusu masala and mix well stuff this masla in to the brinjals
6.Next, take a kadai add oil, turmeric, curryleaves and stuffed brinjals and cover with lid (lid filled with water amd cook for 5 to 8 mints( as shown in the video. Until the brinjal become soft.
7.Add remaining onion masala and cook for a minute, next add tamarind extract to that brinjal and adjust water & salt.
8.Next, add remaining shivangi pulusu masala powder, jaggerry and cook until pulusu thicken
9.Mean while, shivangi pulusu is boiling we need to prepare tadka heat a pan Add oil,mustard seeds , cumin seeds, dry red chilli, curry leaves, Hing,when it splutters golden brown, pour the tadka over the shivangi pulusu mix well and check consistency (as shown in the video) switch off the flame.
Shivangi pulusu is ready and serve with hot rice and enjoy.
