The morning begins with an extremely simple and strange dish that is very familiar with the Vietnamese people. Eggs are beaten with scallions, fried on a pan and covered on the top is soft chewy rice paper. Then the cook will quickly roll up. This dish reminds me of my childhood, breakfast with fried eggs and rice, when I eat this dish, I miss my home so much. In the morning, Khoai also eats fried dumplings, similar to pepper dumplings, but they are fried in a pan and the filling is slightly less pepper.

After finishing my breakfast, Khoai goes to the suburban to visit, the air is fresh and extremely cool. Puli is quite famous for its water bamboo, a Japanese exported plant with a high cost. In Vietnam, it’s called “Niễng”, mainly grow wild but they’re not grown commercially. If the plants are infected with fungi, the stem will bulge and is edible. This part of the plant is very sweet and juicy. This is the specialty of this place, it’s a must try here. In addition, Khoai also eats citron daylily, bird-nest fern, and boiled chicken, the food here is more delicious and frugal than in the plain.

That afternoon, Khoai visited a traditional paper producing facility in Taiwan and made a piece of paper for myself. Thanks to that, I have a better understanding of other ways of making paper in Asia, outside of Vietnam.
