Nankhatai Recipe: Traditional Pakistani Shortbread Biscuits
Ingredients:
200 grams clarified butter (ghee)
200 grams icing sugar
200 grams all-purpose flour
2 grams baking powder
180 grams almonds, roughly chopped
Baking Time: 25-30 minutes
Baking Temperature: 150°C
Method:
Start by heating the ghee until it melts, then refrigerate it until it solidifies.
Once the ghee is solid, transfer it to a mixing bowl and add the icing sugar, all-purpose flour, baking powder, and chopped almonds.
Knead the ingredients together to form a smooth dough. Once done, refrigerate the dough for a while to cool.
Preheat your oven to 150°C.
Shape the dough into small balls or flatten it to make round biscuits.
Arrange the shaped dough on a baking tray and do a light egg wash on the top.
Bake the Nankhatai in the preheated oven for 25-30 minutes, or until they turn golden brown.

250 grams whipping cream
Food coloring (as required)
Baking Time: 30-35 minutes
Baking Temperature: 160°C
Method:
For the Sponge Cake:
In a mixing bowl, combine the egg, sugar, milk, yeast, oil, all-purpose flour, cocoa powder, and hot water.
Mix the ingredients well until a smooth batter forms.
Pour the batter into a baking tin and bake at 160°C for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Allow the sponge to cool completely. Once cooled, cut the cake into layers and lightly soak each layer with milk to keep it moist.
For the Frosting:
Melt the white chocolate and cooking oil together in the microwave until smooth.
Add the whipping cream to the melted chocolate mixture and blend until well combined.
Incorporate food coloring as needed to match the Cocomelon theme, creating your desired color combination for the frosting.
Assembling the Cake:
Layer and frost the cooled sponge cake with the prepared frosting.
