One of India’s most loved ‘biskut’ is the Nankhatai! Nankhatai is a 400 years old cookie that was created in a bakery in Surat, Gujrat.
Nankhatai is made with just 4 ingredients- flour, ghee, sugar and cardamom powder. You can bake the Nankhatai in an oven at 170C for 16-18 minutes or make it in a kadhai too!
I have shared here with you how to make nankhatai without an oven.
There are many recipes in which you may add atta or besan to the nankhatai dough but I have shared the traditional recipe using only flour.
Nankhatai is an eggless Indian shortbread cookie that has a very Indian flavour.

Nankhatai
Preparation Time: 20 minutes
Cooking Time: 15-16 minutes
Serves: 4-5
Ingredients:
1 cup ghee
1 cup sugar
2 cups flour
1 tsp cardamom powder
½ tsp baking soda
1 tbsp yoghurt
Method:
Powder the sugar. Mix together the powdered sugar and ghee and whip till light and creamy.
Sift in the flour, cardamom powder, baking soda and mix well. Add the yoghurt and bring together to make a dough.
Make lemon sized balls of the dough and press to make an indent. Press pistachio slivers in the indent and bake at 170C for 18-20 minutes. Remove form oven and cool down completely.
Alternatively, spread salt in the base of a kadhai. Keep a ring over it and cover it. Preheat for 15 minutes and then use it to bake your nankhatais.
Serve.
