My uncle, Don Rains, is the creator of the meat pie you are making. He worked in a pastry shop making all sorts of sweets. He came up with the idea, instead of fruit filling, he would try hamburger meat, so this is how the meat pie came to be. He later bought the Demon Inn cafe, across the street from Northwestern State University and continued to make his creation to sell in his cafe. I know the original recipe, your recipe is close to his, but lacks some ingredients that were used in the original. I may have relatives that still live in Marthaville or Cypress Louisiana that can verify my story. I wanted to add that piece of history behind the meat pie, not the Natchitoches meat pie. I wanted to give credit to, my uncle Don, for creating one of the famous dishes that came from Louisiana.

I always called the Lasyone’s meat pies, since I always got mine at Lasyone’s! My mom went to Northwestern back in the day. Thanks for adding to the story.

I know is a bit of an older video. But I've spent 3 years working on a recipe to recreate what I had when I was in Louisiana. My head chef and I came up with it. Instead of straining off that fat or liquid we added flour to make it it into a gravy with stock and everything and would cool it over night so when you fry them you also get that gravy pouring out if it.
