Tuna Tartare
1 steak of fresh sashimi grade tuna (from the fish society)
1/2 cup of chopped fresh dill
2 tablespoons soya sauce
1 tablespoon of Worcestershire sauce
juice of half a lemon
pinch of salt and pepper
Chop up your tuna into small chucks, make sure your hands are clean and all of your equipment is clean.
Add avocado and fresh lime juice
Service on grilled ciabatta which has been doused with olive oil, lemon juice and garlic.
Poached Salmon
In a pan get some water simmering and add some salt and some dill, add a few lemon slices and cook off your salmon in the poached water until the salmon is firm to the touch. Put it in a container and let it cool down before you refrigerate it.
Tuna en Papillote
You simply wrap up the tuna in a tin foil parcel, I add some olive oil, sliced red onions, chopped chives and juice of half a lemon and half a lime. Add a little seasoning before you pop that in an oven at around 170 degrees for around 20 minutes.
Smoked Salmon Dip
About 3-4 slices of fresh smoked salmon, the smoked salmon I got from The Fish Society was seriously some of the nicest I have tasted. Not to oily and not too salty, just right.
Put your slices of smoked salmon in a food processor and mix in a handful of sliced red onion and a handful of chopped chives. Add two tablespoons of cream cheese and a squeeze of half a lemon. Blend until smooth. You're done!
We ended off with a delicious Chocolate Mousse
Ingredients:
1 cup of double cream
2 egg whites
2 tablespoons of sugar
1 teaspoon of sugar
200 grams of melted milk chocolate
Method
Whisk the double cream with 2 tablespoons of sugar until stiff. leave to the side.
Melt your chocolate in the microwave, should take around a minute on high to melt.
Whisk your egg whites until soft peak stage, with the teaspoon of sugar. The egg whites should be soft and foamy and the peaks should be soft but stable. Fold in the melted chocolate to the cream and the whipped egg whites slowly and with a metal spoon so that the air is not beaten out of your mix.
Drizzle with left over melted chocolate and refrigerate immediately until ready to serve. Serve chilled with strawberries or raspberries.
