I made this last Sunday wanting a vegetarian meal but a fried egg goes so well with Gundruk ko Jhol (Fermented Veggies Stew) 😂
Gundruk Ko Jhol:
* about 1 cup brown/white soybeans
* 1/2 tsp fenugreek seeds
* 2 dried chillies
* 1 and half large baking potatoes
* 4-5 cloves garlic halved
* a big handful of gundruk/fermented veggies
* 1 large tomato
* 1.5 tsp salt
* 1/2 tsp turmeric
* 1 tsp mixed cumin and coriander (I pan roast 2 parts cumin and 1 part coriander and grind them when it’s cooled down and I store them in a glass container)
* 1/2 tsp kashmiri chilli powder
* 1.5 litres hot boiling water
* fresh coriander for garnish
Potato & Beans:
* 1/2 tsp cumin seeds
* 3-4 cloves garlic halved
* 3 dried red chillies
* 1 and half large baking potato
* half a tomato
* handful of green beans - ends discarded
* 3/4 tsp salt
* 1/2 tsp mixed cumin and coriander
* 1/2 tsp Kashmiri chilli powder
* 1/2 tsp turmeric
My friend Surya’s Tomato Achar:
* about a cup of cherry tomatoes or 2 regular tomatoes
* 1/2 medium onion
* 3 chillies or to taste
* almost half lemon 🍋 (make sure no seeds)
* few sprigs of fresh coriander
* 3/4 tsp salt or to taste
