Hi maitryee...I hope u tell us abt the maintenance of ur Loha kadai and tawa soon... i have been asking u abt it many times before...I had a iron tawa but after using it for sometime... the dosa was sticking to the tawa... didn't know what to do .... I want to use it again...as it's better than non stick tawa as far as health is concerned...I see u using the iron vessels almost every day...do we have to polish it or something for food not to stick ???

Hi. Maitreyee, U can add a spn of methi seeds while you soak urad dal. That will gv a nyc flavour and taste to dosa. and also while dividing the batter into two vessels stir well and pour. Else urad dal will settle down.

Soak few fenugreek seeds with rice then make batter it tastes good ...it’s ok if u dnt put salt while keeping it for fermentation..

Raksha Nalavde in winter before fermentation and in summer after fermentation you can add salt if you add 2to 3 tablespoons cooked rice with raw rice while grinding it will make idli s soft

In karanataka v use 1 small spoon of soaked methi seeds and 1 small onion to dosa batter it's taste nice...grind soaked methi and onion wit rice....once u try it u wl love it

U can soak few (1 tbsp) methi seeds along with rice n grind them together. Also add thin Poha while u grind rice, urad n methi seeds, dosa will be soft.

Nice to see you relishing south indian food. For dosa use 1:4 ratio of urad dal and raw rice, add a tsp of methi seeds.While grinding you need to add half cup cooked rice and half cup soaked poha, this makes your dosa get nice reddish colour. Try this next time. For idly it should be boiled rice instead of raw rice. Poha not required. But if you want to make both idly and dosa with the same batter then it should be 1:2:2. That is 1cup urad dal, 2 cup boiled ricd and 2 cup raw rice. It works great. Try and let me know

Hai deedi how are you ? I am a South Indian A small tip for you while making idly dosa batter add 1 tbsp of methiseeds at the time of soaking and after grinding just add rock salt and kneed with your hand it helps to ferment fast . And one more tip while grinding chutney add 2 or 3 small onion also add its also increase the taste of chutney .Try it deedi

Try breaking the coconut with a sickle shaped knife. After breaking keep in the freezer for ten minutes it will easily come off. So the batter you made is tamilian style. Kannadigas add more rice and also little methi seeds

We are lucky to get fresh dosa idli and aapam batter in Dubai in all the grocery stores also freshly grated coconut 🥥 to make chutneys so no need to soak n grind we also get dosa n idli batter in powder form here. To get your batter well fermented keep the batter in a hot spot in your kitchen or cover with a thick blanket you can also put it in the oven switched off of course lol but keep the oven light on over night for heat for fermentation which I do when I go home to Toronto as it’s too cold there
U add Lil curry leaves and coriander leaves while grinding di.. It will b even more tasty.. I m a tamilian....v usually make like dis....

In Karnataka also dosa is done for breakfast.......u can keep the batter for one ni8 for better fermentation and you can add coriander leaves to coconut chutney and try it dii....loads of love
