Watch out with the pithe (i assume this is how you spell it, English is my second language), it can bring bitter notes to the drink

That doesn’t matter with a garnish like this though that will not come in contact with the drink. In this case, pith helps the garnish to hold its shape better.

With orange peel garnishes I like to fold them in the middle above the drink. It spritses the essential oils into the cocktail for a really great orange flavor. It's the same reason certain recipes call for citrus zest

A good bartender has garnishes like this ready to go. They come in before open to do prep work. On top of that, a lot of places will have servers do "sidework" and one of those sidework jobs is often "cutting citrus". Typically that means your more standard lemon, lime, and orange wedges, but a good server would help out the bar by preparing so peels like this. Its VERY important to keep the bartenders happy, otherwise your drink tickets will sit in the printer for a long, long time.

It's a potato peeler. A citrus peeler has a curve to slice less "white stuff" off, to preserve an aesthetic look for the twisted and skewered peel.

This garnish does add flavor by adding aroma . Even if you take it off, the oil from the citrus is on the rim of the glass. When you take a sip, the orange aroma blends with the flavor of the cocktail giving the drink a more complex flavor.

Wrong. The white stuff beneath the actual skin is giving a bitter aroma to the cocktail. Try to cut it off by laying your knife on the peel with a little angle. It still holds up perfectly if you know how to do it. Takes a bit of practice but its worth it.
