As someone that has spent 30 years in the restaurant industry I have never been a fan of the "annual gimmicky pans". I prefer All-Clad professional cookware. However, my sister bought me the two pan set for Christmas and I'll be honest... I wasn't in any hurry to use them. In fact they hung on my pot rack for 3 months before I used them and.... well i was impressed. If cooked well, had a good sear on the meat and then it cleaned up so easily... Ok, so now I will actually use it more than my other pans... It is actually very good...

The 1st Gen. Type Pan with this configuration stone coating came out in the nineties one key feature is that it's not flat it's a porous surface it's got peaks and valleys so the food is actually cooking on top of the peaks therefore you have air getting in between these valleys and there's virtually no way for it to stick that's what makes it a very very good Pan

I'm with psibeast. More info please. To me one of the most important qualities of a pan is it heavy and thick enough to spread heat evenly and NOT WARP. Not warping is as important to me as non-stick and non-stick longevity. The first granite stone pans were cheap and thin and I had no expectation that they would not warp. They did, and rather quickly. By fairly convinced they do have a better surface, but does that now come with the other qualities that make a very high quality pan.

Try seasoning your copper pan as you did the GraniteStone pan and see if there is any improvement.

Have you re-seasoned the Red Copper pan to maintain its non-stickness?

How about 5 months down the line. I find my non stick pans usually die after that time.

I have both the Granite Stone and StRfrit Rock pots and pans and I abuse the heck out of them. 1.5 years later they are still functioning like new, even after being run through the dishwasher many times.

One thing I didn't see you address is how quickly the pan heats up. For a quick breakfast of eggs, if the added thickness of the induction compatible base requires an extra 3 minutes to start cooking, that's probably going to favor the older version. (if you can find it) Considering that you think that the cooking surface hasn't changed much if at all.

I have a set of the Granitestone Diamond Pro cookware. I don't think anyone has mentioned the lids. They're impossible to clean when food gets under the edges. The edges should be sealed off, but I cooked some barley with the lid on and the foam with some of the debris got under the edges, and there is no way to clean it out. There is just enough for stuff to get in but can't be cleaned out. Seems very uinsanitary.

I got the original, after your video. Then my wife got the 9-1/2" , because she liked the 12"! They're still doing good! I might just have to get the new one now. By the way, they work great for scallops, my wife says they taste like Red Lobster's! They don't stick, and they sear perfectly without overcooking them!

I’ve been waiting for this review I wanted to see how well the new pen worked compared to the old I wish you would’ve made some steaks and pork chops to see how it did with that and with seasonings on it love the video

This looks like a fine pan for my kids since they fry eggs, breakfast meats, or warm things up on the skillet. I think for dinner meals with thicker meat portions, the cast iron or carbon steel pans are ideal since they are extremely heat tolerant for searing.

Best way for you to enjoy that chicken when you dont use seasoning like you did in the video is to have some fresh cut tomatoes with some seasoning flavor on a cutting board an then when you take out the chicken nice and hot cut it up on top of the seasoning and the heat from the chicken will suck in those juices and you'll have some amazing chicken!!

DO NOT USE non stick cooking sprays, they leave a buildup and will make your granite stone start sticking. Happened to me when someone did it, I had to do a lot of light scrubbing to get all the non stick residue off.

Agreed - what sense does it make to season a non-stick pan? The oil was not spread thin over the surface when he popped it into the oven, so big areas wouldn't have been touched by the oil in order to coat the surface. Very weird.

I might season mine. One of the 2 I bought is sticking after 7 months.
