[Teriyaki Sauce Ingredients]
1 cup soy sauce
1 cup mirin
1 cup of water
4T sugar (60g)
2T minced garlic (30g)
1 t black pepper
2 slices of ginger
a string of green onion
1/2 onion
2/3 oranges

250g salmon
150g broccoli
50g red cabbage
salt, pepper and some flour
[Starch]
50g water
2T glutinous rice flour
[how to make]
1. Put all teriyaki sauce ingredients in a pot and boil over high heat.
2. After boiling once, reduce the heat to medium-low and boil for about 20 minutes.
3. Wash and clean the broccoli, then boil it in boiling water for 1 minute.
4. Put it on a sieve to completely remove the water.
5. Salmon season with salt and pepper.
6. Lightly coat the surface with flour and cook it in a pan until golden brown.
7. Remove the perfectly cooked salmon for a while and drain the oil.
8. Add 1 to 2 cups of teriyaki sauce to the pan where the salmon is cooked and add starch to adjust the consistency to a thick consistency.
9. When the thick teriyaki sauce is complete, put the salmon in it and boil it down for 1-2 minutes.
10. Place salmon on top of warm rice.
11. In the same way, add broccoli to the sauce, lightly rub it, and place it on top of the rice.

[Cooking Tips]
1. If you boil broccoli for more than 1 minute, the crunchy texture will disappear and it will become soft. Boil only1 minute.
2. If you simmer the broccoli in the teriyaki sauce for too long, the color will turn brown. Just rub it lightly quickly.
3. Teriyaki sauce tastes better the longer you boil it. It's okay to boil up to 1 hour 30 minutes.
4. Use only the amount you need for the teriyaki sauce that is not mixed with starch, and store the remaining sauce in the refrigerator for about a month.
