What he said towards the end about gumbo is true for all soups and stews. You cook it today, but don't serve it today. You put it in the fridge overnight, then take it out tomorrow, heat it up slowly until it's bubbling, and then serve it. Everything will have a chance to marinate in the seasonings overnight, and will taste loads better.

OMG !! How wonderful someone brought back up his cooking episodes. My late grandmother used to watch his shows religiously. Not for the cooking. Just to hear him talk. She used to tell me if you ever want to know how my family and I spoke before we went to school all you have to do is listen to Justin (Wilson). My older family member's were born and raised near Red River, LA. So, they would have been very familiar with people speaking this way. Rest in peace, dear Mr. Wilson. Your stories, manners and influence live on.

Red River is pretty far North of the prairie lands where most Cajuns are from, and the Eastern areas where the Creoles are mostly from. But, just like all cultures, the French cultures weren't static, they blended East into Mississippi, West into the Houston area, and even North towards Arkansas and the Red River area where your family is from. Depending on when and where your grandmother came up and her ethnicity, she may be remembering a time when people were being forcefully assimilated into the greater Anglo culture of America, around the time people were punished and socially ostracized for speaking French. My grandfather used to call non-French people "Americans" and my father and his classmates were beaten in school for speaking French. It's really interesting, and a bit sad, to see how much French people from my father's, and your grandmother's generation have changed. Justin Wilson was actually an exaggerated caricature of Cajuns, which was his shtick. Just like most ethnic caricatures, he was somewhat accurate but not quite, lol.

Hes the reason I use my hand to measure salt ,season by taste not by recipe and use Louisiana hot sauce on just about everything... Mr.Wilson ,Mr.Rodgers and Bob Ross on Oklahoma PBS in the 90s raised me ..As I didn't have a father figure and nana worked..now me and my 5 year old son get to watch them together.Thank you

I went to LSU in the early 70's, and I used to watch his show, just to hear him talk. He was a great chef; but also had a touch of comedy. Definitely a big fan of Justin. I guarontee ! I'm hungry just watching this episode !

I’m from Louisiana, years ago when I was working in Illinois, a group of us went to breakfast after working the late shift. When the waitress came to take my order, I told her I wanted some bacon, eggs, and grits with butter. She looked at me like I was crazy and asked me “what’s a grit”? I don’t know who was more surprised, her for being asked something she never heard of, or me for her not knowing what grits were.

The sad thing is not so much that he is gone but that modern networks would rarely (if ever) consider the classic chefs today, or any of the shows so many people remember the best; WIlson, Kerr, Childs, Yan, etc. All their charm and expertise as individuals are untouchable to the average marketing department now.

My grandpa was from Louisiana and he always watched this show. I remember grandpa being a slight “hater” too. As he watched Justin whip up his Cajun dishes, he could be heard saying to himself “I bet that don’t taste like nothing!” Then he would wave his hand 😩😩😩😩. Grandpa is gone now, but I watch Mr. Justin every now and again to bring a little piece of him back.

I watched him on our little TV as a kid... We had one small TV with 4 channels and an antenna wrapped in tin foil and I'd tune it to channel 8 just to watch him and listen to his stories. Love and miss those times. Thank you for the great memories, Justin.

The Emperor been cooking gumbo my whole life. I’d say you need to use butter, not olive oil, and that rue looks too dark. Might be the old film though. Rue should be the color of an old copper penny. He uses filé to thicken, but it can go stringy. Okra is better and adds that flavor. Justin didn’t like two things I know of. Okra and bay leaf.

We watched this every week..right after cartoons went off. His voice was always hypnotic even for kids.... what's great is ya people would speak similar to this at home(new orleans) ...so you understood and related to everything he said. Nothing better than Cajuns n Creoles❤

I sure loved watching this wonderful man. He was a part of my childhood T.V. programs. Loved to hear him talk. He's definitely made me smile and laugh. Loved those stories!! 😘🕆❤👣🌹🌹🌹😎☄

I was a child also watching Mr. Wilson with my grandmother. He was one of my favorite Louisiana cooks on pbs. I loved his accent and hearing him speak😄

I have so many fond memories of watching this guy on PBS with my mom. Makes me happy to see him again. My mom still pronounces "onion" the way Justin Wilson does - "awn-yon."

Oh man, thanks so much for posting this.... I am missinng my dad big time, and him watching Mr. Wilson cookin' up some gumbo is one of my favorite memories. This sure brought some great memories back. Thank you!

Omg! I was obsessed watching Justin Wilson on PBS when I was a kid. My favorite is the end of the show he always had a huge jug of wine.

Same. Originally from Louisiana, and Tatum's accent should have based his dialect off this man's style... or even the 90s cartoon V.O... but instead we got a mix of something much closer to Jamaican with slight French and gibberish.

I worked a few private events for this man...they were wild affairs and the food was amazing...I miss this show alot. Would kick back on a Saturday as a kid in New Orleans and learn how to cook like a pro.

As a kid, every Saturday morning I was in front of the tv watching this man... it's how I learned to measure with no spoon, lol. My cooking styles were definitely influenced here. RIH Mr. Wilson, you are missed.

the closed captions for Mr Wilson are hilarious! I used to watch him all the time when I was stationed in Ft Polk. His stories remind me of my maternal grandpa.

Me too. I love him and his recipes. Watched him on PBS before we had cable. Bought his cooking book, Outdoor Cooking With Inside Help. Taught me how to boil corn, cook gumbo, and make yeast rolls.

I once heard someone say, “There’s as many gumbos as there are mamas.” I guess what they meant was everybody has their individual take on the ingredients and cooking process. I enjoyed watching Justin Wilson’s cooking show back in the day, especially when he was in his outdoor kitchen. I liked his one teaspoon of salt in his hand so much, I practiced it until I got it right and now use it to show off when I’m cooking. He was a national treasure.
