It looks tasty, but I agree with others on the cutting method, too many broken shell chips for me. Maybe they fall to the bottom of the fryer, but still seems pretty sloppy. How much would this dish cost, two over 8 pound lobsters.

Some cultures are used to eat with their shell on like shrimp, lobster, fish with bone/head... but for lobster I think the shell also adds to the volume that it's a big plate? You can pick out the meat with a small fork, you don't bite it down with the shell on.

Because with the shell it can better keep the flavor of the sauce and is good for make meat tender to thicken the mixture of corn starch and water. Directly fried and stir fried will lose the juicy and flavorful.

@@javiervasconez9561 It is not entirely deep fried. This cooking technique is done in restaurants, the lobster is coated with corn starch to prevent drying out. The oil frying ensure the lobster is cooked. This technique is being done for hundreds of years if not thousands of years. Somebody like the lobster broiled, baked, streamed or other technique. But today the lobsters are done stir fry style. People are willing to pay for good food and experience. No right or wrong. Just enjoy.

I really don’t understand why chef cut a big lobsters to such a tiny piece? If I am a customer, honestly I prefer to eat big prawn rather than lobster cut in tiny piece. And see what they cook? Ground pork? It’s totally lower down value of the plate.

I know many ppl dont like why the lobster is chopped up like that. a dish like this is meant to be shared among as many as 8-10 people at a table and it is a common preparation in cantonese and chinese cuisine. For dishes that are single served, i normally see the lobster prepared in halves down the middle. personally, i also prefer my lobsters and especially the claws whole. also, i doubt the restaurant wasted the lobster head tomalley, they just used it for other things like stock instead of serving it to the person that ordered the dish :l

The chef js considered using the freeze death method which is very merciful killing. He did not directly kill it while its alive with the knife. Compare to other chef, he is experience chef.

Eight + pound lobsters are kinda tough to chew , so although I hate see such a magnificent lobster chopped into smaller portions , I actually think this is the best preparation for such a huge lobster. I am sure the taste is yummy and the bill is YUGE !

Their carapace is very difficult to break through. I’ve had one a few years ago only slightly larger, maybe a little less than twice the size shown. Same variety as the claws contain some of the best meat. Very sweet, naturally. Best way to eat them, in my opinion, is served with melted butter. We got day olds and they were maybe $40 each whereas if they were live it would have been $80 a piece.

Actually u need to boil then for an HR. At least. After the get so big cooking then for 15 mins are useless. I've been lobster fisherman for years. Took over my dad's license. Cook them for an HR in sea water and u will have a tender lobster.

The tail is different tho. I take the tall after I've boiled it in seawater and put it in butter on a very low heat an let it soskand boy it will fall apart. You have to try. Hope it helps it next meal of lobster. Have a good day.

I used to buy lobsters this large and steamed them, not boil or bake and definitely not fry. When steamed they were as tender as a one-pounder (called a chicken lobster; those with a missing claw are called Culls). 🦞 ❤
