I do the same with my Pellet - smoke at 200F, till they are 80F, flip, then 125F they head to the blackstone.. cranked... and 1 min each side... perfect. Cheers to another great vid.

Greg I told you how amazing our Piedmontese is. Thank you for trying Pied. Soon we will be crossing Pieds with Akashi which is a Japanese Wagyu cow. Then the ultimate beef will be born. Piedmontese if you didn’t know has been informed by the American Herat Association. Less fat than chicken less cholesterol than any meat. Cheers

Greg, Kenji proved (as did others) that setting your meat out for an hour at "room temperature" only increases the internal temp buy a couple of degrees F, so it doesn't affect how the meat cooks. The biggest factor is the moisture on the outside of the meat, not the temperature.

All right Greg, definitely pulling out the LSG Santa Maria today. My kids definitely thank you for the motivation. You mentioned that you were getting low on cooking wood. Have you tried Olson fire/cooking wood in Escondido? That is my go to.

Looks good. I like to soft or melted butter, or olive oil them either one, Helps in protecting them from drying out. So there juicy and tender. In glazing, charring them in a flame. I never probe a steak before 😆 i can tell by pick them up, limp rare, little limp med rare, stuff well done ~ I like mine bloody rare. So i char it a little about 2 min, on a good flame, on both sides and its done. My Uncle is the one that got me eating them bloody rare. He's right ! More tender and juicy with lots of favor, it melts in your mouth. My sister is the one who got me eating raw oysters. It took me 3 months i started chasing them down with a beer, that what got me liking them Now i carve them raw. Now i have a hard time deciding? do i want them raw or fried ~ I LOVE BOTH

Can I ask why you only cleared 1/2 the silver skin off the back of the loin? The entire loin was covered in it but you only took off some of it.

That looks delicious!! I love it! You should check out the SearPro torch. I highly recommend it! Perfect for sous vide too!
