Definitely agree with using fresh citrus.. Someone commented saying to only use lemons. In Panama, we use lemons and/or limes. I prefer limes.. But both will work :)

yea, i always use fresh lime/lemon juice in anything that needs that juice, but especially ceviche. that bottled stuff just tastes funny. Plus i question it's acidity levels. citrus juice looses acidity the longer it sits outside the fruit I beleive. So if u are using it as a cooking medium it should be fresh sqeezed. IMHO. And i agree, the juice from ceviche is great, i like to make rice with it.

I’m in California and we love Mexican food. No one would ever use bottled lime juice, it’s got to be fresh. You would use white onion, beautiful chili, a little tomato, cilantro. Only soak the fish about a hour. It gets a 1/2 cup of Clamoto

It's not actually cooked - what happens is the proteins in the fish denature in the presence of citric acid, mimicking the effects of heat. You still need to be super careful when consuming it, and treat it as if it is a raw fish dish (like sushi or sashimi). Use the freshest fish possible, avoid consuming it in less-developed countries, and try to eat and serve it immediately.

I just wanna point out.. if it weren't for people experimenting with food.. we would all still be eating raw meat.. not cooked even on a fire. So lets just forget about this not being the correct recipe.. everyone knows the correct recipe.. SHE WAS JUST TRYING TO BE INNOVATIVE!!
