NO BAKE YEMA CAKE | STEAMED CHEESY YEMA CAKE RECIPE | Inspire PJE
Here is my recipe of No Bake Yema Cake that you can try at home. This Sponge Cake is covered with creamy and delicious all time Filipino favorite, Yema, and is enhanced with cheese flavor. This dessert will surely make your mouth water.
INGREDIENTS
Sponge Cake
▪️1 1/4 All Purpose Flour
▪️1/2 Tbsp Baking powder
▪️1/2 Tsp Baking Soda
▪️1/2 & 1/4 Cup White Sugar
▪️1/2 Tsp Salt
▪️4 Egg Yolks
▪️4 Egg Whites
▪️1/4 Cup Oil
▪️1/2 Cup Evaporated Milk
▪️1 Tsp Vinegar
Yema Frosting
▪️4 Egg Yolks
▪️3/4 Cup Evaporated MIlk
▪️1/2 Cup All Purpose Cream
▪️1 Tbsp Cornstarch
▪️380g Condensed Milk
▪️1 Tsp Vanilla
▪️2 Tbsp Butter
PROCEDURE
Sponge Cake
1. In a mixing bowl, combine egg yolks, oil and evaporated milk. Mix well.
2. Add the dry ingredients to the egg yolk mixture. Mix well then set aside.
3. In a separate bowl, beat the egg whites until bubbles formed. Add the vinegar to the egg whites then beat it until soft peaks formed.
4. When you already achieved the soft peaks, gradually add the sugar in the whipped egg whites then beat it again until stiff peaks formed.
5. Add the meringue to the egg yolk mixture little by little. Gently fold the meringue in every addition.
6. Fill your greased Llanera halfway with the yema cake batter. Cover it with foil before steaming.
7. Steam the yema cake for 45-50 minutes or until a toothpick inserted in the middle comes out clean.
8. Let it cool before serving.
Yema Frosting
1. In a pan, combine egg yolks, evaporated milk, all purpose cream, cornstarch, condensed milk and vanilla. Mix all the ingredients until well combined before turning the heat on.
2. Turn the heat on and let the yema frosting cook until it is thickened. cook it on medium low heat.
3. When the yema frosting is already thick, turn the heat off then add the butter. Mix well.
4. Let the frosting cool down before using.
