Lovely, lovely bread! I had the hardest time finding single edged razor blades, until I discovered paint scrapers at Dollar Tree. They come with a pack of 5 extra blades, so that's 6 blades for $1 US. Love your butter dish, thanks for making sourdough baking look so easy, I really have to get started with my starter!!

Those look delicious, also great merchandise Mr. Dale. The tee-shirts are very good quality, I'm almost afraid to wear it because of fear of spilling something on it haha but have worn it several times now or in public with at least one comment of a fellow viewer who also watches you in my area also and I've done had 5 cups of tea with my new mug. Thank you, the process is very easy to order and I had no problems what so ever. Although the tee-shirt package had a tear in it when it arrived but nothing inside was damaged and the coffee mug was wrapped really good with bubble wrap with no damage to the box it came in. Thanks again for sharing.

Well! I ordered the starter-got it all going-and, boy, did it ever get going...didn’t have time until yesterday to start the rolls-couldn’t wait to try them...in the meantime made some sourdough pancakes with the leftover dough...OMG were the rolls ever delicious!! And so easy!! My new fave for sure. Enjoyed them with a bowl of steamy homemade soup! Oh, my!!😋 Thank you so much for the starter and the recipes🤗

I make dinner rolls by incorporating melted but cooled butter every time I stretch and fold the dough, makes a huge difference. I also brush melted butter before baking. I make 80g rolls.

Hi, your rolls turned out amazing! You will have a freezer full of goodies for a rainy day with soup! My grandfather would make those for all the wedding and baby showers in our family and he would add food colouring to match the theme of the occasion.

Mine are really sticky. I see you've set yours down on wood but mine stick to the wood so bad as if I smashed it down into the wood. Same with the laid wrap I covered with. What did you cover with? I assume I need to add more flour.

How do you get 770 grams of flour ? King Arthur bread flour is 120 grams per cup. 3.5 x 120 = 420 grams, which yields a much stickier, more highly hydrated dough than your video shows. I don't know whether to proceed with the recipe at 420 grams or add more flour to make it resemble what you show.

Thank you - Novice sourdough maker made this recipe 3 times now issues with being too sticky. Original recipe metric conversion is 385g of flour - I worked out 770g was wrong. Googled 3.5 cups & got 420g. I used less water in 2nd & 3rd tries. Still not perfect but will keep trying.

You need a danish dough wisk. It does not cling to the “spoon” or wisk as much as other kitchen tools

I made something similar to this. If you place it in bag after cooling the next day the hard crust will be gone or less.

Yes that should work I would adjust the cooking time and lower the temperature a bit.

I have never use spelt but it will work with a whole wheat bread flour or a multi grain bread flour it must say bread flour on the package though which means it has been blended with white bread flour so it isn't so heavy. Ronin Hood sells these flours in Canada.

Ok Dale ! Your recipe looks great but leaves me a bit bewildered, you start with 770g of flour but the all the other ingredients are in cups or teaspoons for 12 dinner rolls. I then click on to the recipe link, it then gives your weights as US or metric so iI go metric, the recipe now says 437.5 of flour. Could all Americans please buy digital scales instead of using cups which are inacurate. sorry for going on a rant! but not many if any people in the UK and Europe use cups for measuring.

I had the same issue! I don't know how you get 770g of bread flour! Other websites listing the weight of 1 cup of bread flour seem to be about 127g or maximum 157g. No where near the 220g per cup needed to get 770g for 3 1/2 cups! But I tried your recipe and it sorta works. Except that it's a very hard dense roll. When I tried the 127g = 1 cup, it was too hydrated to hold its shape.

I think if I remember right this had been fed a few days earlier and them put back in the fridge. Wirth this long overnight proofing you could use starter right from the fridge.

You can take any recipe and scale it back to the size that you want just reduce all of the ingredients by the same percentage 50%, 25% etc.
