ALDC has been in my process for a couple years now... Still have never had a single issue with diacetyl/buttery flavors. I highly recommend trying this enzyme out. Reduces or eliminates diacetyl in beer as well as the need for a diacetyl rest.
Thought I'd put this together to share what it's for, how to use it to its fullest potential, when NOT to use it, and some of my findings around how ineffective it is for preventing hop creep!
