Nonnette is the French name given to its gingerbread rolls ♥ Filled with marmalade (you can of course choose the jam of your choice). This recipe is ancestral! It comes to us from the Middle Ages (this recipe was made by nuns to sell to travellers). The icing can be made as in the video or with 1 egg white (if you pasteurized the egg). Their full name is "Nonnette de Dijon" but it seems that it is actually a specialty of Reims (which made them with anise). To enjoy with joy for an afternoon snack that will please everyone! Ingredients :
125 ml of water (1/2 cup)
60g brown sugar (¼ cup)
150 g of honey (1/2 cup)
60 g semi-salted butter (¼ cup)
1 teaspoon of cinnamon
1 teaspoon gingerbread spice
120 g flour (¾ cup)
100g rye flour (½ cup)
1 teaspoon baking soda
1 teaspoon lemon juice
Orange Marmalade
4 tablespoons icing sugar
1 tablespoon of lemon juice or rum :)
