In north america the salt is included in the instant noodle seasoning packages. I hope that is not the case here, since they added an enormous amount of salt prior to adding the seasoning packages from the instant noodles.

No. On some videos, they show other ppl - kids, elders, family etc. eating. So usually it's for the rest of the people behind the scene. For this vid, it's just one person & they show how they usually eat it there... plate it, with a fork, banana leaf on a plate, on the floor.
