Since the Michelin Awards Nordic were virtual this year, we produced a few segments for the star revelations show together with the Norwegian TV-channel Matkanalen.
As the Nordic signature ingredient from Denmark, we chose pork meat. We specifically wanted to showcase a modern farm that puts animal welfare in the front seat. If everyone did farming the way Birthesminde Gård does, the world would be a better place - with happier animals and higher quality food! At Birthesminde, they breed Mangalitsa and Danish black-spotted pigs. All the pigs live freely outside all their lives in little huts and are allowed to grow at a natural pace. The food includes leftover mash from the beer production of Herslev Bryghus and croissants from the bakery Il Buco in Copenhagen, which further contributes to zero waste!
After the farm visit, we went to Dragsholm Slot to meet with Jeppe Foldager. This Michelin-starred restaurant works with Birthesminde and the head chef prepared one of his signature dishes with pork.
