The recipe was easy to follow and it came out amazing :) The only difference was that I used 0% Liberté Greek yogurt, brined leg and thighs with bone, and I let it simmer for an hour after the last step :) The meat was literally sliding off the bone when I ate it with lightly toasted whole wheat tortillas :) I used no salt other than the brining step :) Thank you Vijaya :)

I made this last night and I’m convinced it was the best curry I’ve ever made. I made a double batch and actually used a little less onions than asked for- I wasn’t sure how it was gonna turn out. As soon as I added the onions, it came together beautifully. The key is getting those onions caramelized; it takes a lot longer than 15 minutes too.

In Hawaii there aren't many good indian food restaurants but I have a favorite in the city... unfortunately we don't get out to the city often so I only get to eat it once or twice a year. I've been searching for a proper korma recipe like what they offer but have never been able to duplicate it. I knew that geography was the main difference with the recipes I was trying and the one I actually wanted but I had no clue what part the family that owns the restaurant is from (they're first generation immigrants and a very tiny family run restaurant so it was his mothers recipe and he absolutely would not give me any hints). This blows it out of the water! This is the exact flavor i was looking for and i believe i can add the veg that they use pretty easily (i usually get it with eggplant). Thank you thank you thank you! This taste fabulous and its easy to follow you through the whole video!

I made this for my parents a while back, adding some sauteed poblano peppers for some additional vegetables. They recently told me they enjoyed it so much, they have gotten korma at every Indian restaurant around town, and none of them are anywhere near as wholesome and flavorful as this recipe. I keep coming back to this video. Very simple and to the point. Pleasant to watch. I have made this specific recipe about 5 times now and it delicious every time. I used to measure the seasoning but now I just eyeball it lol. Goes well with white rice. And you can eat it with naan or roti too 😋

Just tried this in a veganized version (soy-yoghurt + veggies instead of yoghurt+chicken) and it blew my mind! 100% recommendation. Only one thing I'd like to add: for those who are a bit heat sensitive, serve this dish with some extra yoghurt and/or chutney as it is (to my european palete at least) on the more spicy side of things. Loved the video!

Hi currently in the process of making this, waiting for that oil to separate from the yogurt 😅and I can already tell it will come out delicious thank you for this:) I wish I had the original ingredients to make this but I substituted yogurt for sour cream. Accurate description! Indian food is my absolute favorite! Fortunately I finally found an Indian market somewhat locally. The owner's wife is SO sweet to me. She's always so patient, sometimes she laughs at me when I bring her printed recipes LOL. She's always very kind and just puts things in my cart and asks me over and over if I know what I'm doing. 😂🤣 If I'm not sure she pulls out a pen and paper and writes me instructions and it's so awesome!! The restaurant they own is next door, so if I mess it up she will always ask me when I pick up takeout. If it didn't turn out well and she has it on hand, she always puts a little cup in there with more instructions. I adore this woman! I secretly wish she'd adopt me haha!

I live in southern New Jersey we have lots of great ethic restaurants in my state but most are in North Jersey closer to NYC. My real favorite is actually Thai. I live on an island off the coast of NJ and theres a lot of amazing seafood and many Mexican restaurants, Chinese, and of course it's NJ Italian restaurants & pizzerias. But no Indian or Thai restaurants or stores. I drive an hour away close to the Philadelphia border which is across from Delaware river. That part of NJ has Asian supermarkets but not Indian. But it does have Indian & Thai restaurants to go eat from. There is Whole foods type supermarket called Wegmans (which is better than Whole Foods I think) which carries a lot of Indian products. And an hour half north where I live is a town called New Brunswick which has a huge Indian enclave with Indian tons stores. I don't know if you like Thai but my Thai friend told me that Thai food is actually a fusion of Chinese & Indian. I thought no wonder I love it so much. I tried making pecoras but they didn't turn out very well Haha. I do make great Tiki & Butter Chicken and curries. What have you mastered? If don't mind me asking. 🤩

@@bg9217 Well I'm not sure if I have mastered anything yet. I do feel like it takes a lot of research, trial and error and more research, when you're working with ingredients you're unfamiliar with. Eventually you start to be able to pick them out individually and know if the balance is off. I feel like I'm most comfortable with my chicken curry and Tikka Masala. I've worked the hardest on Chicken Vindaloo because my husband loves it and therefore has high expectations lol! 😂 He's happy with it now but it took me at least a dozen times. Maybe my best is aloo chaat because my sisters fight over it. If you can get your hands on mango powder and tamarind paste, they're certainly game changers. I personally really don't feel like you can substitute for those. I'm currently trying to work up the courage for naan and roti but I'm scared! 🤣

I made this recipe a couple weeks ago, and it is very good. My $30 blender didn't handle the low volume onion and cashew mixture very well, however. I'll use the hand/immersion blender tomorrow when I make another batch. Also I'll add more chili powder because I like it spicy. Thanks for the great recipe and awesome video, Vijaya!

having used both, regular yoghurt is better because the extra fat and water content makes it easier to cook with, but I used greek yoghurt with a bit of added water and it turned out well still

Dude this is wayyy easier than i thought it would be. I ubereats Chicken/lamb Korma every other day - i will have to try and make this dish. It looks quite simple to make its just buying all the spices. I currently have salt, white pepper and all purpose seasoning in my cupboards - i will have to go shopping tomorrow.

Looks amazing! Korma is my all time favourite Indian dish, but I kind of prefer them with coconut. For the southern style, do I just swap the yoghurt with coconut milk, or is it entirely different?

If you want coconut then feel free to replace the yoghurt with coconut milk....but it's not a korma! There is really no such thing as a "South Indian Korma". The dish is North Indian/Pakistani....and it doesnt have coconut in it! However the dish has been completely bastardised by Bangladeshi curry houses in the UK whose chefs had only a passing idea of what the dish is meant to taste like....so if that's the flavour you are used to then feel free to add that coconut milk!😊

I would 100 percent use coconut milk instead of the yogurt, you get a sour taste from the yogurt, or you could use half coconut and half yogurt

@@jons8606 honestly there isnt that sout taste from the yoghurt as long as its cooked out properly after you add (and you dont add loads - 2/3 tbsp is fine for around 1kg of chicken/meat)...coconut milk def gives a richer and sweeter finish though and the 50:50 combo isnt a bad idea to get the best of both worlds....def not traditional but it's all about what tastes good for you!

Looks delicious! But what happens with the cardamon pod, cloves and cinnamon stick that were in it? Can you get them out later? I'd hate to bite down on any of those while eating it!

Terry Clark Indians usually leave whole spices in the dish and pick them out as they go. Just count the number of cloves etc you put in. Then if you want to pick them out before you eat you’ll know how many you need to find.

Another trick I picked up on another video is to place those items in a tea ball and fish it out at the end. It also helps to tilt the pan when blooming these spices so you more evenly bloom them.

I have been trying to recreate the chicken korma recipe from my local Indian restaurant and this one comes VERY close! It tastes amazing and wasn't hard to make at all! Thank you so much for sharing this wonderful recipe. It is an absolute keeper!! A couple notes, I think whole milk full fat yogurt makes is a must. I also added some Thai chili flakes to kick the heat up a bit

Thank you so much for sharing this beautiful curry. I’ve made it twice now. Patience with onions is key. They have to be caramelized well. The first time I made this I did not caramelize them long enough and the curry turned out rather plain. The second time was spot on. I would also suggest if you do not like very spicy to do 1/4 teaspoon chili powder.

Made this yesterday, I added more chili powder and had a bowl that evening but it seemed a bit bland still. Simmered it for another hour and a half and then put it away. The next day, it was 10x better. I'll definitely be making this again.

Using Ghee also adds a great flavour. Nice recipe. Will try it. In north india they often use a mix of almonds, cashews, poppy seeds and melon seeds as well.

I’m totally going to make this one, looks great. Might use lamb too. My chicken karahi has gotten fabulous. This is pretty similar except no tomatoes, yogurt instead, and the onions are more caramelized. Slightly different spice blend. Sometimes I see saffron in korma too.

Can’t wait to try the recipe out! Looked more delicious and tender and creamy than the restaurant take out korma I was eating while watching this.
