Brinjal stir-fry, also known as Badanekayi Palya, is a popular South Indian dish made from brinjals (eggplants). The dish is typically prepared by stir-frying sliced brinjals with spices and seasonings until tender. Common ingredients used in this recipe include oil, mustard seeds, turmeric powder, salt, and optionally, other spices like chili powder or garam masala for added flavor. The brinjal slices are often cooked until they are soft and slightly caramelized, resulting in a savory and aromatic dish that pairs well with rice or roti.
