Ingredients:
500g wholemeal self-raising flour
100g brown sugar
2 tsp mixed spice
150g unsalted butter, cold and cubed
250ml milk
120g chopped dates
Instructions:
1.Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
2.Combine dry ingredients: In a large bowl, whisk together the wholemeal flour, brown sugar, and mixed spice.
3.Rub in the butter: Using your fingertips, rub the cold butter into the dry ingredients until it resembles coarse breadcrumbs.
4.Add wet ingredients: Stir in the milk and chopped dates until the dough just comes together. Avoid overmixing.
5.Shape and cut: Turn the dough out onto a lightly floured surface and gently pat it into a 3cm thick rectangle. Use a 5cm scone cutter to cut out scones.
6.Bake: Place the scones close together on the prepared baking sheet and bake for 12-15 minutes, or until golden brown and cooked through.
7.Serve: Let the scones cool slightly before serving with your favourite spread.
Notes:
For a richer flavour, use a combination of white and wholemeal flour.
If you prefer a sweeter scone, increase the brown sugar to 120g.
For a variation, try using raisins or sultanas instead of dates.
If you don't have mixed spice, a combination of cinnamon and nutmeg can be used as a substitute.
To make the scones vegan, replace the butter with vegan margarine and the milk with plant-based milk.
To store, place cooled scones in an airtight container for up to 2 days.
