This is the scale I have amzn.to/4cgEtLK. *The recipe for the onion sauce (Enough for 2 hot dogs) is* : 1 large yellow onion sliced into thin rings * 2 tablespoons ketchup 1/2 teaspoon brown sugar 1/4 teaspoon chili powder A few dashes hot sauce 1/4 teaspoon cinnamon Water for consistency *Sauerkraut* For the sauerkraut, you just need to weigh your cabbage and then add 2% of the cabbage by weight of salt. You can also add other seasoning like caraway seed.

You did not spice your water, so no, they are not dirty water dogs. The term dirty water refers to the look the water takes on when it has spices placed in it that flavor the dogs while they cook. While I'm sure these are good dogs, they don't meet the requirements for NYC pushcart dirty water dogs.

Great point which no one has brought up until now. That said I question how much those spices would have infiltrated the hot dogs I made since there are not sitting in the water all day like on an actual hot dog cart. I may have to do some testing.

You have to spice the water, usually with salt, pepper, garlic powder, and onion powder. I like adding cumin and cayenne pepper. It creates the dirty water you cook the hot dogs in.

Okay, so not totally authentic. Still looks like a great interpretation of a push cart dog. But better! I certainly have made my share of simmered dogs. But props for the homemade sauerkraut! And to top it off, the best part of this recipe is involving your son.

Don't know where you're from but I am from Brooklyn where there is a Sabrett hot dog cart on every corner. Although your grilled onion sauce is probably great it is NOT how the original is made. Nothing is grilled on their dogs It's fine if you want to say the recipe is based on the original, but please don't mislead people who have never had the classic to think that your rendition is how the original will taste. I belong to the unofficial Sabrett fan club and for 15 years I had a couple of originals almost every day. Grilling the onions will definitely give them a different taste. I'm sure yours are great, just not the same as the original. Just sayin'🌭🌭🌭🌭🌭

Thanks for the feedback, I live on Long Island and work in NYC. I could have boiled the hotdogs, but my video is focused on griddle, grill, and smoker. If you know of a recipe for the onions that is how the carts make them I would love to see it. When I researched my recipe, I found lots of recipes similar to mine and tweaked mine to be my own. My guess is that most of the carts use the premade onions but I could be wrong. I provided a link to the store bought onion sauce in my description.

the hot dogs have to dropped on the floor at least 6 times to be authentic NYC dirty water dogs ! , now to be honest there use to be a dog cart on 53rd and 6th that have the absolute best chili dogs and sausage chili dogs i have ever had in my life then in 2017 he vanished

I have a question... You called those Sabrett's "Dirty Water Dogs" They are called dirty water dogs because they cook in the same water all day long, yours didn't, you said push cart onions like Sabrett onions in sauce but your recipe omitted ketchup, red wine vinegar and brown sugar... those are just some of the ingredients... I'm wondering why you called them New York push cart hotdogs, I'm from Brooklyn and I'm wondering if the push carts are different in LI???? Sauerkraut recipe looks awesome.

Ben, I am a retired hot dogger. I owned my own hot dog cart for over ten years and loved every minute of it. Worked year round 5 days a week and I must say your dogs look good man. I would definitely eat one of those. If I live closer to you we could have a dog out and cook some dogs together.

Cabbage should be washed, but it is typically cleaner than lettuce since it is so tightly wrapped, even tighter than iceberg lettuce.

The hot dogs are cooked already, I cook them until the outside is browned as much as I like, once they are a golden brown the inside is more than hot enough to eat.

To each their own, I would never be able to get as consistent slices with knife as I could with the mandolin. I prefer that all of the cabbage be consistent. You would probably really be twisted when I make stuff like this in bulk and use a food processor.

We are in Nassau, not far from Bethpage. Let me know how you like the sauerkraut, you can add some spices if you like, caraway, bay leaves etc. But for hotdogs I like it simple.

I actually want to do a Rhode Island classic called NY System Wieners which has a heavily spiced meat sauce, mustard, chopped white onion and celery salt, but a regular old fashioned chili dog sounds great too.

Nathan's are overrated. Sabrett are very, very good. But only sold at Publix in Alabama. But the very BEST hot dog, of course, is Vienna all beef from Chicago.
