This recipe reminds me of the trip to New Zealand where we enjoyed the unique Greenshell mussels only found here at the Mussel Pot Restaurant in Havelock, Malborough also known as the "Mussel Capital of the World". The half shelled mussels are cooked in the most delicious white wine sauce, perfectly served with crusty bread for dipping. Not only are they so easy to cook but this recipe will have you wanting to lick the plate to not miss a single drop of that delectable sauce. Try it!
Ingredients:
907g half shelled mussels from Talley's
30g unsalted butter
½ cup shallots, minced
1/3 cup garlic cloves, minced
1/2 cup roma tomatoes, ¼-inch dice
1 teaspoon lemon strip, add more to taste
half lemon juice, squeezed
1/3 bottle white wine, dry white
2 wedges lemon
kosher salt, to taste
black pepper, to taste
4 or 5 sprigs of dill
