Those look great, I haven't yet done any beef ribs, it's so hard to pull the trigger on ribs, when a near by ribeye at the butcher, is 3/4 the cost. I added big green eggs gasket material to my doors and my gauges quit getting covered with soot.

You should give the beef ribs a try. The ones I used I got from Wal-Mart. The larger ones they sell are all bone so make sure they are they say riblets. They run between $6-$8. I will be doing them more often. I didn't do the gaskets because my smoker hardly leaks. When I open the firebox for a length of time is when I think the soot gets on the thermometer...I'm guessing. I'm hesitant to do a brisket on the old country. I use the wsm for briskets. If I can commit to a day long cook that is required for brisket , I'll do it. After 5-6 hours I'm ready to get out the house lol. Love the WSM!

How is the smoke flavor on this smoker..I read that the smoke releases fast bc of the large dampers placed above and dose no circulate around the meat..also where did you get the cover from?

The smoke flavor is there. I haven't had an issue with the large dampers either. If you run a very clean fire, there will not be as much smoke flavor but that is with any smoker.
