Hummingbird cake
Dry Ingredients
· 3 cups all-purpose flour, plus more for pans(sifted)
· 1 cups granulated sugar
· 1 cup light brown sugar
· 1 tsp baking powder
· 1 tsp. table salt
· 1 tsp. baking soda
· 1 tsp. ground cinnamon
Wet Ingredients
· 3 large eggs, lightly beaten
· 1 1/2 cups vegetable oil
· 1 1/2 tsp. vanilla extract
· 1 (8-oz.) can crushed pineapple in juice, undrained
· 2 cups chopped bananas (about 4 medium bananas)
· 1 cup chopped pecans, toasted is best
· Crisco or shortening (for greasing the pan)
· 1 tsp vanilla extract
· 1 tsp banana extract
· 1 tsp rum or pineapple extract(optional)
Cream Cheese Frosting:
· 1.5 (8-oz.) packages cream cheese, softened
· 1 and 1/2 sticks of butter, room temp
· 24 oz powdered sugar
· 1 tbsp. vanilla extract
· ½ tsp banana extract(optional)
· ½ tsp rum extract or pineapple extract(optional)
· 1 cup pecans (optional)
Preheat oven to 350, grease and flour 3 8” round cake pans, set aside. Sift 3 cups of all-purpose four and whisk together all dry ingredients. In a separate bowl mix all wet ingredients, starting with whisking the eggs, gradually add in all wet ingredients then mix with dry ingredients, no need to mix with hand mixer, do not over beat. After it is well blended pour into 3 pans and bake until toothpick inserted is clean, I baked mine 30-35 minutes….enjoy
