It was like that when I worked in a restaurant. Spend a shift running around and I'd be tired and wired. Part of the reason there is so much drinking in the industry.

There is an omurice chain called Pomme no Ki, but it is a different style (egg wraps around the rice and is usually a lot firmer). I think Tamagoken is better for the insanely fluffy runny eggs, while Pomme no Ki is great for the toppings.

I love midnight diner ! It’s one of my favorite shows ! In case you guys were maybe interested, there are more seasons besides the one on Netflix as it’s actually been around as a TV series in Japan since 2009. I recommend checking out the other seasons because they’re just as good !!

i guess you could compare omurice to meatloaf, hear me out, so many people make meatloaf for dinner but it's not one of those dishes that are easy to find at a restaurant. I've personally never seen meatloaf on a menu.

On the topic of eating raw or undercooked eggs, I’ve heard that most countries vaccinate their chickens against salmonella where the US relies on refrigeration to keep the bacteria at bay. Some countries don’t need to refrigerate eggs because of this. Found the article: www.latimes.com/food/dailydish/la-dd-heres-why-we-need-to-refrigerate-eggs-20140714-story.html

I guess rice is the Japanese bread. I remember my mom used to make us fried rice with onions and bits of bacon then put a fried egg on top. We would mix the egg and runny yolk with the rice. I think I will make that tonight.
