Try this simple yet tasty one pot meal for your family one night - chicken and rice in one pot, best thing about this meal is you can use whatever ingredients you already have in your fridge or cupboard! So feel to substitute where necessary.
I used:
chicken thighs (skinless & boneless)
jasmine rice (washed until clear)
marinade:
soy sauce
garlic powder
white pepper powder
oyster sauce
tbsp oil
2-3 small red onions, diced
minced garlic (as much as you like)
tomato puree
veg / chicken broth
oil pan and fry the chicken until just cooked, take chicken aside and add the onions and garlic, fry until softened and fragrant, then add tomato puree. Add your stock of choice (just enough to cover the rice and chicken). Once it's boiling add in the rice and place chicken on top, put lid on and cook on small-medium heat until all the water has evaporated, then cook at low heat for approx another 10 minutes. When you see the rice looking cooked and cannot see any liquid, switch off the gas but leave lid on for another 5-10 minutes before serving.
