That looks delicious! I'd change two things: the guanciale is often better cooked slow. It still roasts well but renders more of the fat and tastes better in the end. And the pasta looks overcooked, I think it doesn't need so long in the pot. But the technique is wonderful and the end result looks delicious, I would be happy to eat that carbonara!
