The omelette was not, in fact, undercooked, even though it looked like it was. A French omelette, like Syd made for Nat, is supposed to have the egg perfectly cooked instead of overcooked or browned, so that it is silky and buttery smooth, instead of crunchy and dense and filled with cheese. Not that I dislike the American omelette, I think it has its place and can be super good, but a French omelette is significantly harder to master and is a significantly different experience. Syd even made sure to contrast the silky smooth texture of her omelette with the potato chips, and the salty and greasy flavor with the sweet and acidic flavor of the orange cranberry juice.

Also - restaurants tend to pos baste which douses in hot oil or butter so it’s fatty but done evenly all the way through vs if it was this soft at home it’d be raw in the middle

Straining the eggs is to remove the chalazae (the membrane connecting the yolk to the whites) and any other membranes that will mess up the curd texture.

Great reaction as always, guys. Running the eggs through the seive insures a totally homogenous mixture going into the pan and removes the chalaza. Both minimize the chances of a "streaky" or poorly-mixed final result. The slightly browned version you mentioned liking is the American cousin to a traditional French omelette. Looking forward to the finale!

a) Straining it leaves it even distribution. b) An omelete won't put you into labor... but family legend is that a friend of my mom, who was 2 weeks from due with me, that she could jumpstart things by eating a chocolate chip cookie and drinking a gin and tonic - it was the very early 70s, it was acceptable then. My mom did that, her water broke that night and I was born 10 day early.
