The golden syrup of Orange Marmalade is like a drop of sunshine on a breakfast toast! A method of citrus fruit preservation, marmalades pack the sweetness, sourness and substance from the pulp along with the slightly bitter bite of the rind giving a well-balanced, jarful of long-lasting fruit!
This video shows a method to use the fruit to its maximum. You can use more/less of the orange rind depending on your palate. It is a recipe for fruit preservation, so it uses sugar, the quantity of which can be tweaked by quarter cups or so; but beware that extreme decrease in sugar can reduce its shelf-life.
Ingredients:
(I used the pulp of 5 Oranges and the rind of 2 to get the following)
600 grams/approximately 3 cups of Orange pulp
100 grams/1 cup of rind, sliced into juliennes
400 grams/2 cups of Sugar
Juice of 1 whole Lemon
This yielded nearly 750 grams of great-tasting marmalade! It can last for months if stored well in air-tight jars in a cool, dark place.
