If you blanch the broccoli rabe first it removes a lot of the unpalatable bitterness while still keeping enough to keep its flavor. Blanch, then immediately rinse with cold water to keep the deep, rich green color. Other than that, this recipe is perfect.

I'm Italian, you made it perfect! Only two little things you should take off the garlic after 2 minutes in the oil and throw it away and we don't use turkey sausage(my father makes it with pork sausage,too, but the original recipe from Bari it's only with broccoli )..sorry for my English! :) ps you should make spicy oil putting pepper into it for 1 months..it's delicious!!!

@Pops1970
8 жыл бұрын
no, not even the same thing. she says if you wanna replace it, use spinach
@MetricButtload
8 жыл бұрын
Yes, you could. I have, it works just fine. Broccoli would have a bit more of the bitterness than spinach would, and more similar in its flavor profile to broccoli rabe than spinach is. Also, it has better texture, because broccoli rabe is tougher than spinach and the texture of broccoli is more similar, where spinach gets soft and squishy. I'd cut the broccoli into thin pieces so it was more homogeneous in size with the rest of the ingredients.
@MrJoshcc600

No the key to rabe is you eat the greens. The leaves. The florets are minuscule if they are even there at all.
