Ingredients for 8 pieces:
For the baking sheet (30 x 40 cm)
baking paper
For the yeast dough:
300 g wheat flour type 550 (2½ cups)
1 tsp salt
15 g fresh yeast (½ ounce)
1 tsp sugar
50 ml milk (3 tbsp + 1 tsp)
1 egg (size M)
50 g butter at room temperature (1¾ ounce)
100 ml water (⅓ cup + 1 tbsp)
1 tbsp sesame seeds, peeled
For painting:
1 egg (size M)
1 tbsp cream
Bake:
Top/bottom heat: about 180 °C / 356 °F 25 minutes
Convection: about 160°C / 320°F for 25 minutes
