Pasta carbonara is the perfect definition of simplicity. The flavour for the few ingredients it contains is impressive.
Important note: the key to this recipe is to gradually add the pasta cooking water to the sauce. If you add too much water all at once, the sauce will become watery and will be very difficult to fix. ⚠️
Recipe for 2 persons - ⏱️: 20-25 min. approx.
Ingredients: 250g pasta, 100g pancetta, 4 egg yolks, about 150g grana padano, black pepper and 1/4 tsp salt.
Step by step:
1. Cook the pasta.
2. While the pasta is cooking, take the opportunity to prepare the sauce. Put 4 egg yolks, grated grana padano cheese, 1/4 dessert spoon of salt and black pepper to taste in a bowl.
3. Mix everything together and set aside.
4. Cut the pancetta into strips and sauté until golden brown.
5. When the pasta is ready, mix all the ingredients together. In the bowl where the sauce was, add the pancetta and the pasta. Add a little of the pasta cooking water and mix until you obtain a creamy sauce.
