Sohla from BA explains tempering really well actually. I'll paraphrase: There are several different crystalline structures that chocolate can form into. When we talk about tempering we are actually referring to one particular structure where the chocolate solidifies at room temperature and has a snap." When you seed temper chocolate you are adding the crystalline structure you want into unstructured chocolate. It's like giving it a hint to form those patterns. A little push in the right direction if you will.

My dad used to own a pizza shop in NY and when I was younger I would come downstairs (we lived above the actual shop in a apartment.) and I eat all the pepperoni. he would have to legit send me back up stairs and lock the door that was in the back room leading upstairs so I couldn't come down again. 😂 Then as I got older I would eat many bags of chips and pizza and wings for free it was great but we moved to Colorado and now we haven't been able to find such good pizza and wings ever again 😅🙃😥

Guys, if you're having to increase production, highly recommend looking into CPI (Continuous Process Improvement) consulting. They can analyze your processes and find ways to improve methodology to maximize time efficiency. I don't have a company to recommend, it's just something I've come across in my line of work and something I was always thinking when I watch your videos - I love that it's all handmade & in-house packaged! But there's definitely ways to improve the process/speed.

My mom made peanut and pecan chocolate all the time. She would put a bit of paraffin wax in it. It tricked the tempering. Always came out shiney. Oh yummy.

My mom made peanut brittle, too. And lots more candy, too. She made candy for our family for Thanksgiving and Christmas. My favorites were Divinity, and Date Nut Rolls!

I love all the candy. My grandkids never had handmade candy. I'm glad they could try it. My mom always made diavinade and fudge at the holidays. You guys are a hoot.
