@@mommae67 you can just load the crackers into the jar and vaccum seal them. (Or throw in an oxygen absorber and put the lid on.) Not really canning but it will help them las much longer.😊

Oh boy this make me long for fresh corn. Years ago I lived in a large household of 12 people and we worked together to put our food up and our favorite was corn. We'd go buy a trailer full of corn from a local farmer, but froze ours after blanching it instead of canning. The best part was shucking the ears, endless corn jokes, silk beards and hairstyles, working with others making it fun and eating all the fresh corn on the cob with butter we wanted. 💕

We just froze 14 ears of Silver Queen 👸 white corn. Full ears with no waste from worms or other issues. Can't use til winter snow days or frost that kills all veatation. My late mom's rule not ours. My mom lost a lot of pint jars of corn, as I look back she had no pressure canner and I think that was why a black bacteria formed and popped the lids off.

We’ve done this my whole life. Also use freezer bag scoop corn in, pour salt water brine over press air out while sealing lay flat on cookie sheets, freeze and stack. We also make cream corn using the rock up corn in the bag then pour in cream/ half and half, about three packs of butter in the bag again press the arrow while sealing lay flat and freeze

Great info!! You might want to mention, that the Presto Pressure Canner has a flat bottom and it is the only one approved for a glass top stove. Most glass top stove manufacturers, don't approve pressure canning on the stove due to the weight and movement or vibration of the pressure cannier during the process. Frigidaire is my glass top stove and they approve the Presto Pressure Canner.

After almost 50 years of doing corn, I bought a gadget from Amazon that you slide the ear on it. It cut and scraped the cream in one swoop. It only took 2 1/2 hours to do 16 dozen ears. Amazing! You can teach an old dog... (we freeze corn, not can.)

You have probably already heard this but if you invert a little bowl into your cutting bowl it makes it a bit easier to cut, you can also drag the back of the knife down the cob to collect the juice. Thank you for all that you do. We learn so much!

Hi Jen and Zach, thank you for all you share and teach. I grew corn once in my 20’s, I had the water ready before picking it. I ate it on the cob before getting it to the kitchen. 😂 Oh my goodness fresh corn is so good. My neighbors found me entertaining, I thought I could dig my garden with a shovel. I jumped up and down on the shovel all 128 lbs it did not budge. I heard my neighbor laughing his tale off. 😂 He asked if I wanted to use his tiller. It ended up with him tilling my garden. I lived in Tennessee at that time. Bet the neighbors were telling blonde jokes. 🤣

Love my AA canner, but will say that I recently purchased a used electric Carey canner and have quickly grown to love it as well. Using the Carey this evening after work to pressure some left over soup. I would have never bothered canning a small amount, maybe 4-5 pints, I would have just froze it. Our freeze dryer has been going constantly as well, lots of zucchini and sliced tomatoes.

When I have extras, like the corn, or tomatoes, just anything, I freeze it then find recipes to add them to; ChowChow, Salsas, relishes and more. For fruit you can make Conserves, mixed fruit jam. Peach, apple and most fruit peelings can be boiled with some water, strained and made into Jelly. Tomato peels can be dried and ground to a powder for adding to soups, stews, and such. Same with a variety of peppers. I love your channel and that you teach, rather than talk. Have fun camping! GOD bless

Love the soap rack. If you buy a second shelving unit you can add more shelves without adding foot print space. Just don’t use the uprights and add the shelves. I did that and love it. I bought foam boards at dollar tree and put on the wire shelves. It works to make my jars stable on the wires. Twice as many shelves in the same space.
