hiya Tom...so I just finished canning up some Bread and Butter pickles (vid coming out in 2 weeks) what is interesting is that I tried it by pasturization (to keep a crispy pickle instead of boiling them...it's an approved technique) I had to hold them between 180F and 185F and i was ABLE To DO IT with this setup. not exactly a scientific study but it's as good as my kitchen stove. I kept a thermometer in the water the whole time...

That's a win. No drift win. Still need to get a steam canner as I'm sick of heating up my dang house with the water bath canner. But seriously, being able to pressure can outside using gas is freaking great. Even with electric stoves, you have drift.

it works great...I even did those pasturized pickles (future vid) I had to keep the water between 180F and 185F and was successful on this outdoor canner....that is precise work. Of course sitting at the outdoor table is hot as hell since the area gets zero wind! argh

I use a double burner to can on my covered back porch. Put up 2 sheets of plywood in the corner for blocking the wind. I use a roller cart to transfer from the kitchen to the canner.

all that is a great idea. I've seen other folks use the plywood to cut down on the wind.. transferring using a cart is genius

I found that my NuWave PIC induction cooker has great control, 10°F increments from 100 to 575°F and wind it not likely to affect the induction of heat into the bottom of the granite ware canner I used to do a short batch of fruit sauce ...able to hold the sauce temperature low enough not to burn the sugars but high enough to activate the cornstarch and adjustable enough to steam sterilize the 1 liter wire clamp silicon gasket Mason jars... all done with under 500 watts of power, low enough energy to run with a drop cord or solar power station. Been experimenting with PV solar cooking techniques and systems.

We are looking into solar power batteries for cooking, mainly as an alternative to using grid power, but hadn't considered canning! That's food for thought.

@@lat1419 you have a couple ways to go with a solar PV electric cooking systems... the power stations with built-in controllers and inverters or the do it yourself type component systems... I have been playing with the power stations that are portable within limits. Fixed solar systems have a lot more flexibility in battery systems. Portable power stations have to minimize wattage required for things like cooking... found induction cookers and exploring what they can do. The temperature control is a nice bonus, and the timer for rice.

@@OldSchoolPrepper my power station in my old truck is a Goal Zero Yeti 1000x, the inverter can do 1500 watts and it weighs about 32 pounds about 980 watt hour battery, the MPPT controller can input up to 600 watts maximum. My induction cookers are NuWave Flex and Gold... 500 watt is lowest setting for both... I also have a couple Itaki cookers (low wattage lunch box and a two speed cook pot) I have run both of those on the cooking rice in one and a stew in the other and together the wattage required was just about 400 watts before I run those I used a popcorn popper 1300 watts I think, to run the battery down to about 30-40%... on one 100 watt solar panel (Nomad 100) and a 28 watt panel I was getting up to about 40-50 watts input, overcast and so on. I hung the panels in the weather and the 1000x power station recovered to 100% in a couple days. I have since gotten 2 more Nomad 100 panels and I have a Ranger 300 watt panel... the potential recovery time I could cut to a couple hours. The 300watt panel is heavy and the 100watt panels are my preferred size for truck portability and hanging on the truck or free standing... the 300watt panel free stands well but I would rather use that with my Goal Zero Yeti 1500x power station which I am thinking about using on a covered patio where I am thinking of adopting an unwanted fridge for the patio. I have combined the 300, 100, and 28 watt panels on an overcast day for about 100 watts input on the 1000x power station. Portability is a combination of weight and handling. I stick with the Goal Zero power stations and panels mostly because of wiring compatibility. And the have the adapters Goal Zero supplies. Anderson and 8mm in that system. The induction cookers running at 500 watts would last just under 2 hours on the 1000x without any solar panels. If one hooked up enough panels to input 600 watts it could stay close to full, with Goal Zero panels at 50% efficiency, 12-100 watt panels could get to the maximum 600watt input allowed by the controller. I have boosted a 50 watt Nomad solar panel to produce 50 watts with reflectors, cheaper than 2-50 watt panels...it is a deep rabbit hole I have been exploring.

yes and with the gas it's a good idea too. At some point I'm going to build a biodigester to make methane and then get some adaptors to utilize that on my gas cookers/grill etc. Have you ever considered a biodigester?

@@OldSchoolPrepper I have seen these, but this is old tech, some ranchers have been using this for years...inspire me to build one, get yours going, I have a lot of poop 💩 I can be turning to gas lol, maybe a future project lol
