I used to eat oxtails as a kid. It wasn't until a few years ago (when they became "famous") that I realized oxtails really are oxtails. I thought it was just the name of the dish. Not literally!!! 😳

It's not a luxury delicacy though. It was slave food that we never stopped eating. We make it good and it's a dish that we'd probably eat more of if it wasn't expensive. If we stopped making it so much they'd drop the price.

@@microchip5673 Exactly. My grandfather worked in a meat market when I was growing up, several decades ago, it was one of the cheapest meats there. It was only when other people found them and they became gourmet. I eat them when I can catch a sale.

Yes, some people boil and steep the meat as a way to clean it then rinse it off. That 3 hours later was probably really 30 minutes because he cooked it again for 2 hours in the pressure cooker. This is how a lot of Asians make their liquid for pho and other noodle soups.

Find a meat store near you , find a whole tail, it's cheaper and they will cut it to the size you want.. it's what I started to do.. a grocery store charges$30 for 6 little bones they are crazy

If you live near a military base, find a friend or relative who's a vet and had a veteran's ID, so they can take you on-base to the commissary! Oxtail are like $15 a package last time I checked... in California!

I'll never understand how these people can have such creative ideas and not wash and season properly. Although, if I was going to make oxtail soup, I'd keep the bones on, add in some yam, dumplings and potatoes, not shred the carrots, with some other root vegetables and generally spice it up. This making me want to quit being vegan to make some oxtail soup lol.

Heres a tip from an old recipe to remove fat. Braise then boil the tail in just water til half cooked ..cool the pot, put in fridge til next day. The fat will have risen to the top and solidified ..it can easily be removed. Finish cooking til meat comes off the bone.

They contain a natural sugar, which is why they make carrot cake out of carrots, that is baddddddd for Diabetics especially if you have type 2. I've studied health and nutrition for years. Also, I'm a Diabetic. My blood sugar raises when I eat carrots. So carrots don't make it healthy for everyone only those who can handle its sugar. You're better off with the traditional low-glycemic complex carbohydrates like celery and red onion that are traditionally in this recipe.

It's best to pull off the water with the oxtails instead of a lot of people scamming the phone off it takes out especially when you're using fresh meat like that it takes out that gamey taste so yes it's a good idea to cook it twice rinse the second time freshwater the second time just like with greens that way it won't be so bitter you wash them the first time of course you strained them and you rent them again and you put fresh water and you cook them again they don't be so bitter than so yes that's good Brotha 😇🙏🏾💯💪🏾✊🏾💜☮️💯❣️
