《Donburi Oyakodon Recipe》
【Ingredients for 2 servings】
300g of chicken thighs
1 onion (120g)
4 eggs
300g - 400g of rice
240g of dashi broth
15g of sake or white wine
80g of soy sauce
26g of sugar
Scallions and nori (for garnish)
【Instructions】
Season the chicken thighs with salt and let them sit for 30 minutes to remove excess moisture. Then, pat them dry.
Heat a little oil in a frying pan and cook the chicken thighs over low heat. Cut them into bite-sized pieces.
Cut the onion into small pieces.
In a pot, add the dashi broth, soy sauce, and sugar. Mix well.
Add the onion to the pot, cover, and simmer over low heat for 5 minutes.
Transfer half of the mixture to another small frying pan.
Add the chicken pieces and simmer over low heat for 1 minute.
Crack the eggs into a bowl and lightly beat them.
Add half of the beaten eggs to the small frying pan, cover, and cook over low heat for 1 minute.
Add the remaining eggs and cook over low heat for 30 seconds.
Serve the Oyakodon topping on cooked rice. Garnish with scallions and nori according to your taste.
