PAALAPPAM
Ingredients
1. Raw rice powder (roasted /unroasted) - 1 cup
2. Rice powder / semolina/ beaten rice flakes - 2 to 3 tbsp
3. Fresh white grated coconut - 1 to 1 ½ cup
4. Yeast - ¼ to ½ tsp
5. Sugar - to taste
6. Salt - to taste
7. Oil - 2 tsp
Preparation
1. Boil 2 to 3 tbsp of coarse rice powder or semolina in water, stirring continuously to get porridge like consistency, cool.
2. Mix together the rice power, yeast & cooked starch together & make a dough adding water, set aside to ferment (6 to 8 hours).
3. Grind the coconut nicely, add to the fermented dough along with sugar, salt & water, again set aside for 1 hour.
4. Apply a drop of oil to the hot appachatti, wipe, pour a ladleful of batter & swirl the batter as shown to get the lace around, close & cook only on side.
5. Remove when sides begin to detach.
