CHICKEN KERALA CURRY
Chicken - 1kg
Fennel seeds - 1 tbsp
Pepper - 3 tbsp
Cardamom - 4 small or 3 big
Turned powder - ¼ tsp + ½ tbsp
Curry leaves
Water - 1 ½ glass
Onion - 2 large
Garlic - 10 buf cloves
Ginger - 1 but piece
Coriander powder - 1 ¼ tbsp
Chilly powder - to taste
Coconut oil
Salt to taste
Hi everyone, today I am here with an easy Kerala chicken curry..
As the first step, we need to dry roast 3 tablespoons of peppercorns, a tablespoon of fennel seeds and four small cardamoms..
After the spices turn aromatic, add it to the smallest out of a mixer grinder and grind it into a fine powder.
Next, add this masala powder along with a quarter teaspoon of turmeric powder and some salt to taste, along with one and half glass of water and a few curry leaves.
Mix everything well and place it on the stove with a lid closing the pan and bring it to a boil. Cook it for another 5 to 6 minutes only after it has come to a boil and then turn off the flame and separate the chicken pieces from the gravy.
For the next step, heat some coconut oil in a pan and add two thinly sliced onions and sauté until the onions turn colour to golden brown..
When the onion has turned colour to golden brown, add a big piece of finely chopped ginger and 10 big cloves of garlic, finely chopped and sauté well along with the onion..
To this, add half a tablespoon of turmeric powder and sauté until its raw smell is gone.
Next, add 1 ¼ tablespoon of coriander powder and sauté until its raw smell goes away.
And finally, add some chilli powder as per your taste preference and sauté until its raw smell goes away too..
Once this masala is ready, add the partially cooked chicken pieces and mix everything well and let it cook on a medium to low flame until all the masalas are absorbed into the chicken and the chicken is cooked through.
When the chicken is completely cooked, add the gravy which we had kept aside while cooking the chicken and bring it to a boil and then let it simmer for around 5 to 6 minutes.. sprinkle a few curry leaves and mixing a tablespoon of coconut oil and the curry is ready to be served..
