Makes 9 x 13 Casserole Pan
1 lg sweet onion, diced small
1/2 stalk celery, diced small
2 sticks butter
2 Tbsp poultry seasoning
5-7 lbs peeled, diced white potatoes
Chicken Broth- 2 cups
Water-6-7 cups
4-5 slices white bread
Milk-1 to 1 1/2 cup
3 Large eggs
Parsley, chopped, about 1/2 cup
To large frying pan add 1/2 stick butter, melt and add chopped onion and chopped celery on high heat. Cook til translucent. Add poultry seasoning to onions and celery. Cook until caramelized, adjusting temperature of heat--about 10-12 minutes. Set aside.
To large stock pan add water and chicken broth and dash of salt. When water is boiling, add the chopped potatoes. Cook until fork tender. Drain and place in mixing bowl. To the potatoes add 1/2 stick butter and milk, salt and pepper. With electric mixer, mash potatoes, adding milk and butter as needed to creamy consistency.
In small bowl place bread slices and pour milk over to soak up in the bread. Add 3 eggs to the mashed potatoes, parsley, onions and celery. Mash up the bread slices with your hand and then add to the mashed potatoes. With large spoon, mix together. Once incorporated, use electric mixer to mash all together.
Butter the 9 x 13 pan on all sides. Place potato mixture into pan. Put a couple pats of butter on top. Cover with aluminum foil. Bake at 350 degrees for 1 hour. Enjoy!!!
