Pad Thai
Makes 2-3 Servings
Ingredients
Dried Noodles
Palm Sugar
Tamarind Concentrate
Fish Sauce
Dried Shrimp
Sweeten Radish
Shrimp Paste with Soya Bean Oil
Dried ground chiles
Firm Tofu
Bean Sprouts
Green onions
Shallot
Garlic
2 Eggs
Chicken or shrimp
Ground peanuts for garnish
Sauce
2 Palm sugar disc
6 TBSP water
1/3 C Tamarind Concentrate
1/3 C Fish Sauce
Soak 1/2 of the dried noodles in Room Temperature water for 1 hr then drained.
Cook proteins then set aside
Add oil to pan then add minced garlic, chopped shallots, chopped dried shrimp, and chopped sweeten radish.
Cook for 30-45 secs until softened and fragrant
Add noodles followed by Pad Thai Sauce, Shrimp Paste with Soya Bean oil and ground Chile peppers
Cook until noodles have absorbed 1/2 of sauce
Push noodles off to the side, then add a oil, add eggs and cook until it starts to set
Fold noodles over eggs then stir
Add proteins
Lastly, Add bean sprouts and green until sightly wilted.
