Delicious, buttery and soft Gluten free Pain au Chocolat ! Finally got this recipe to work! Takes time and a lot of patients but its WORTH IT!!!
Ingredients:
Dough:
250gr Gluten free Schar Bread Mix (2 cups)
1 tbsp salt
2 tsp dry yeast
3 tbsp sugar
120ml warm water (1/2cup)
120gr butter (1/2cup)
Filling:
Dark chocolate
In a small bowl put yeast, 1 tbsp sugar and warm water and cover to sit a side. In a big bowl mix flour, salt and rest of sugar. When yeast is activated add to flour. Add slowly warm water and form a dough. Let it rise for 1h in warm place. When rised cover with plastic foil and leave in fridge 30min. On a baking paper in center put soften butter. Cover in square shape and press in thin layer to make butter pocket. Put in freezer for 15min. Roll out dough in long rectangle shape and fold both sides in center. Turn and roll out again, then put butter pocket in center and fold over dough. Roll and cover with plastic foil and leave in fridge for 30min so butter gets cold. Repeat rolling and folding 2 more times with fridge break in between of 30min to create layers. Then roll out in big rectangle and cut edges. Cut approx 7cm (3inches) wide. Put chocolate on end and roll all the way. Put on baking paper and brush them with egg. Let them rise 20min and then brush again with egg. Bake on 180°C (375°F) for 20-25min. Enjoy!
